A recipe for setas con jamon
“Setas con jamón” is a classic tapas dish from Spain that is both simple and delicious. Translating to “mushrooms with ham,” this dish boasts a garlicky flavour where oyster mushrooms and Serrano ham create a perfect marriage of flavours.
If Serrano ham is not available in your area, Parma ham or Pancetta can be used as substitutes. While the traditional recipe calls for the addition of eggs, I just prefer this way,
Ingredients
- Olive oil
- 500g oyster mushrooms
- 3 cloves of garlic
- 100g Serrano ham (or Parma ham)
- Chopped parsley
- Salt & pepper
Directions
- Heat the olive oil in a large frypan over medium heat.
- Add the chopped garlic and fry gently for 1-2 minutes until softened, stirring occasionally.
- Add the diced ham to the frypan and cook for 1 minute, stirring occasionally.
- Add the cut mushrooms to the frypan and stir to coat them in the garlic and ham juices. Cook for 5 minutes on medium heat, stirring occasionally, until all water has evaporated and the mushrooms are tender and lightly browned.
- Season with salt and pepper to taste.
- Garnish with chopped parsley before serving.
